A Craving for Crayfish

If you’re wistful for a taste of Louisiana, try Minnesota Sea Grant’s free crayfish recipes. A Craving for Crayfish is an 11-page recipe card-sized publication that features 10 recipes and instructions on how to transport and prepare these mini-lobsters. This is an updated version of the same publication that was printed in 1995.

According to author and Minnesota Sea Grant Associate Director, Jeff Gunderson, crayfish tails are low in calories and high in nutrition. A quarter-pound serving of tails contains only 82 calories, compared to 242 calories for the same amount of ground beef. Crayfish are also a good source of calcium, phosphorous, iron, and B vitamins.
